We have arrived at the end of another school year!  Our last installment of Veggies Matter highlights Arugula this month.  This peppery green tastes so delicious tossed with tomatoes in a light balsamic vinaigrette and topped with shaved parmigiano cheese.  Try it, it's sure to please you!
